Durante años admito que odiaba las recetas que
requerían el uso de hielo roto. Romper hielo con un trapo, no era nada divertido.
Nunca me quedaba queda bien. Los paños se empapan, y nunca se tiene un trapo lo
suficientemente grande como para hacer una buena cantidad de hielo. Ni hablar de
si el paño larga pelusa. Por otro lado, también es necesario tener un buen mazo,
que en el caso de los hacedores de hielo roto “casero” termina siendo un palo
de amazar o una sartén en su defecto …. Muy poco profesional hasta el momento…
For years I admit I hated recipes
that required the use of crushed ice. Crush ice ice with a bar rag was not fun

Pero con el tiempo y mi desarrollo como
cantinero, el uso de hielo roto se me fue haciendo cada vez mas indispensable,
sobre todo luego de descubrir que me gustaban mucho los Mint Juleps y mas aun
cuando me enamoré de la coctelería Tropical (Exotic Vintage Tropical Drinks suena mucho mejor
que decir Tiki, no?). Al ir entendiendo
de que se trataba esto de usar hielo roto (también llamado pellet, crack o
nugget ice) mas me iba enamorando de la idea de usarlo (sobre todo, porque para
entonces vivía en el Caribe).
As I grow as a Bartender, the use of crushed
ice became more important for me, especially after I discover how much I liked Mint Juleps
and even more when I fell in love with Tropical Cocktails (Exotic Vintage
Tropical Drinks sounds a lot better than Tiki). When I understood that using
good quality crushed ice was important I star to search for the better way to
get it .
El hielo roto, cuando más pequeño (y cuantioso)
más rápido enfría. Y si el cocktail están bien bien frío, cuando se sirve sobre
hielo roto, la dilusión es lenta. Es decir en lugar de diluirse muy rápido, al
contrario, el hielo ayuda a obtener una excelente temperatura helada. Si la

Crushed ice, when smaller (and large
amount) faster cools. And if the cocktail is good and cold, when served over
crushed ice, the dilution is slow. That is to say, instead of diluting very

En adelante la necesidad de tener hielo roto en mi barra se hizo inminente.
Con los años descubrí la primera solución.
Existen Maquinas de Hielo que hacen Hielo Roto! Sí! Pero desafortunadamente son
muy costosas y mis empleadores nunca quisieron comprarme una! Es lógico, la
cantidad de hielo roto que se potencialmente se utilizaba en el bar, no justificaba
tan tremenda inversión (estoy hablando de miles de dolares). Ojo! Hay bares que
si tienen estas máquinas, un lujo!
Over the years I discovered the first
solution. Ice Machines that make crushed Ice! Yes! Unfortunately they are very
expensive and my employers never wanted to buy me one! Of course, the amount of
crushed ice potentially being used in the bar did not justify such a huge investment (I'm
talking about thousands of dollars). Anyway there are bars that they have these machines!
La necesidad me hizo toparme con la siguiente
solución : La Maquina Picadora de Hielo.

following solution: The Ice Crusher Machine.
Existen de varios tamaños. Desde grandes a
chiquitas. Eléctricas y manuales. Las manuales son más practicas en el sentido
de que no se necesita acceso a la electricidad. Las eléctricas, pueden ser una
buena opción a tener en el bar. Lo cierto es que si sos un cantinero viajero
(de los que no tienen auto) como es mi caso en cierto punto una maquina
picadora de hielo termina siendo mas un problema que una solución. No existe
tal cosa como una picadora de hielo pequeña. Las mas pequeñas, tienen el tamaño
de una licuadora prácticamente, y si quieres una de buena calidad (manual) el
compartimiento pica hielo es de metal por lo tanto son PESADAS. Transportarlas
no es nada cómodo.
There are several sizes. From big to
small. Electrical and manuals. The manuals are more practical in the sense that
no access to electricity is required. The electric ones, can be a good option
to have in the bar. The truth is that if you are a traveling bartender (of
those who have no car like me) at a certain point an ice crusher machine ends

ice picker. The smaller ones are the size of a blender sometimes, and if you
want a good quality (manual) the ice pick is metal so they are HEAVY. Carrying them

Un día, revisando una famosa página de esas que

hielo que estamos rompiendo.

El Jean es una excelente tela en términos de resistencia y absorción del liquido (para Lewis Bag digo), el problema es que la intensidad de los golpes hace que el Jean largue un poquito de pelusa azul (al menos esta fue mi experiencia). A su vez, los martillos de goma no se recomiendan tanto. Utilizar una herramienta con puntas redondeadas y dar golpes suaves y constantes repercute en la calidad del hielo que se obtiene. Se rompe mas parejo y además la vida util de la bolsa se extiende.
The first attempt was successful. The
Jean is an excellent fabric in terms of resistance and absorption of liquid
(for Lewis Bag I say), the problem is that the intensity of the blows makes the
Jean drop a little bit of blue fluff (at least this was my experience). In
